Midnight Pecan Brownies
Serving size: 12, 1-inch squares
Ingredients:
1 1/2 cups soaked black beans (or canned) 1/2 cup rolled oats
1/4 teaspoon sea salt
1/4 cup molasses
1/4 cup applesauce
2 teaspoons vanilla extract
2 tablespoons dark 100% cocoa powder 1/2 teaspoon baking powder
1/2 cup dark chocolate chucks
1/2 cup whole crushed pecans
Coconut or avocado oil for greasing
Equipment:
12 x 12” Baking dish
Parchment paper
Food processor
Directions:
Preheat oven to 350 degrees Fahrenheit. Cover the entire pan with parchment
paper and grease the bottom of the pan with chosen oil.
In a food processor, add the beans, cocoa powder, oats, sea salt, molasses, applesauce and vanilla extract and process for 8 minutes or until smooth.
Transfer mixture to a bowl and fold in the baking powder and chocolate chunks and pecans.
Press batter evenly into pan, and bake for ~ 20 minutes, or until slightly firm to the touch.
Let it cool and cut into squares. Enjoy!
